09:50 - KICK OFF
A very quick welcome message from Glenda Barber, Team Marketing host.
10:00 WELCOME
Get settled in and kick things off with a welcome from our event MC, Dan Brookman.
10:15 - KIRSTY HULSE - PRACTICAL OPTIMISM
Kirsty Hulse is one of Europe's most in-demand keynote speakers on confidence, influence and the kind of energy and optimism we frankly all need more of right now.
As founder of Roar Training, she's spent over a decade teaching the world's biggest companies how to build leaders who actually get heard, and teams who actually want to show up on a Monday.
-
She's trained 80,000+ people across 30+ countries for clients like Amazon, LinkedIn, Meta and Spotify. 100% of attendees recommend her work to colleagues. Her sessions get called game-changing and life-changing so often she's stopped being embarrassed about it, and she's picked up a Most Inspirational Speaker award along the way.
She's the author of Don't Swear At Work (& other bullshit) and the creator of Confidence Live, Europe's biggest confidence conference, where world-class speakers share a stage with wellbeing experts, comics and poets.
Kirsty built her first £1M business at 25, working with the likes of Virgin Atlantic and IBM. She's also a stand-up comic with a show at the Edinburgh Fringe under her belt, and brings that same punch, warmth and optimism to every stage she steps on.
When she's not on one, you'll find her trying to make corporate slides funnier. Someone has to.
10:45 - KUVI HOSPITALITY - YOU CAN’T IMPORT A QUEUE
What we learned taking a US brand (Coyo Taco) across the Atlantic with Shereen Ritchie, CEO and Rebecca Di Mambro, CMO from Kuvi Hospitality.
Hosted by Nick Liddle, CCO at Openr
Coyo Taco opened in London to serious acclaim. None of it was inherited. Shereen and Rebecca discuss what actually transferred from Miami, what had to be built from scratch for a UK audience, and why running brand and operations as one conversation was the decision that mattered most.
11:15 - TEAM MARKETING COUNCIL - HOW TO GET BUY IN FROM THE BOARD

12:15 - YOUR CHOICE OF 3 WORKSHOPS
Our attendees will have the choice to attend one of 3 workshops - brand new for this year.
Select your workshop at the checkout.
-
Format: Hands-on & Crafty Interactive Workshop
Requirements: a print copy of your current menu
Roll up your sleeves and prepare to get creative as Annica takes you through the techniques she’s used to map out game-changing new menu designs for brands including Rosa’s Thai, Pizza Pilgrims, Caravan, Tonkotsu and The Real Greek - without any graphic design experience!
Learn the fundamentals of good menu design from a brief presentation with examples from real menus, then get crafting your next masterpiece.
You’ll also learn how to save money on design fees - and create better briefs - by bringing your ideas to life before engaging a designer.
Expect a creative break from the rest of the conference and take home stacks of menu knowledge, a useful new skill, as well as a prototype for your next menu change.
What we’ll cover live in the room:
Menu design fundamentals: where things should go, where they absolutely shouldn’t and how to drive better customer experiences - and SPH - through strategic use of science-based design techniques
How to save money on menu design: the analogue visualisation techniques that help bring new layouts to life without the need for software, so you can test your ideas before involving a designer
Nailing your next design brief: the three vital elements almost no one thinks to include, even though any brief is better with them in it
Note: This is a hands-on practical workshop. Spaces are limited and you must bring a printed menu (your own or your favourite restaurant’s) to participate
-
Format: Live "On Your Laptop" Interactive Workshop
Requirements: Charged laptop + an active ChatGPT or Claude account
We are all using AI, some more than others, so no one needs to be taught "how to write an Instagram caption with ChatGPT." The potential for using AI is enormous, but the gap between normal users and super users is vast.
This is a live, participation based masterclass on how to use the AI tools available to automate your manual admin, slash campaign execution time, and build a high output workflow for your brand and team, working with AI in the work, not just as a chat interface.
When Aden (CTO at Guestwise) first started implementing AI workflows, he was burning through £2,000 a month in AI tokens. By refining his setup and which AI to use and when, he cut that spend down to just £200 a month, while drastically increasing his and the team’s actual output.
In this interactive session, Aden is opening his laptop, sharing his screen, and guiding you step by step through setting up real time AI tools you can use when you get back to the office.
What we’ll cover live in the room:
Real-time setup: Build, test, and deploy practical AI use cases on your own laptop during the session.
The £2,000 to £200 playbook: How to stop wasting prompts and start building lean, highly efficient AI workflows.
Hospitality marketing hacks: Practical setups for campaign drafting, market research, data formatting, and board reporting.
Note: This is a hands-on technical workshop. Spaces are limited, and you must bring a laptop with access to ChatGPT or Claude to participate.
-
Format: Live and hands-on.
Requirements: Your website URL and a phone or laptop (a phone will honestly be fine) with access to email.People are increasingly asking AI "book me a table for six on Friday near Shoreditch, one gluten free, one high chair." And you really need an AI Agent to be able to do that on your website.
The good news is that nearly everything stopping an agent from actually using your website is small and boring and fixable.
None of this workshop needs you to be technical - it just needs someone (Lisa!) to guide you through what matters and what doesn't.
So that's what we'll do, in the room, on your own site, with a printed checklist to work through. Some of the points you'll be able to answer yourself, others Lisa will give you a tool to check with.
Lisa has spent 25 years building and fixing websites, and she's spent this year running a series on the agentic web for marketers who are accountable for sites they didn't build.
What we'll cover:
What an AI agent sees when it arrives at your website
The handful of things that make a site unbookable, and what to do about each one
What to fix, in what order
You'll walk out with your own site's list, in the order worth fixing, and the words to send to whoever looks after it.
13:00 - LUNCH BREAK
Remember to tell us about your dietary requirements at the ticket checkout.
Lunch options will be confirmed soon.
14:30 - ARC INSPIRATIONS - THE HONEST REALITY OF THE MARKETER - FOUNDER RELATIONSHIP
Hospitality marketing often lives in the high-friction gap between creative vision and operational reality.
In this no-holds-barred fireside chat, Arc Inspirations Founder Martin Wolstencroft and Marketing Director Laura Lewis pull back the curtain on their working relationship. From navigating the classic "who signs the cheques vs. who makes the noise" tension to building a trusting partnership that scales an empire, this is a warts-and-all look at how senior marketers and founders can successfully build together without burning out.
15:00 - WINNING THE 2027 GUEST
Meet our giant panel. Find out what each of these brands from across each hospitality space is doing to ensure they “win” guests in 2027.
Hosted by Jack Edge, Founder of EDGEY:
Jen Wragg - Sales and Marketing Director at The Alchemist
Jonathan Lloyd - Commercial Director at Inn Collection Group
Marc Saunders - Director of Marketing for Hotels at Dominus
Sam Hawker - Head of Digital Marketing at Boxpark
Natasha Naik - Head of Marketing at Comptoir Group
Catherine Wells - Senior Marketing Manager at SushiDog
Ruth Chan - Head of marketing & partnerships at BAM Karaoke Box
15:45 - TAKE A BREAK
Fuel up with tea or coffee and get ready for our epic closing speakers.
16:00 - BIG MAMMA GROUP - FROM COOL BRAND TO GROWTH MACHINE
What it really takes to reconcile viral cultural cachet with scalable commercial performance from Victor Lugger, Co-founder of Big Mamma Group.
Big Mamma proved that maximalist, high-vibe dining could become a global phenomenon. But generating online hype is only half the battle, the real work is turning that cultural moment into an operational growth machine. Victor breaks down why being a 'cool brand' is no longer enough on its own, how to build the commercial systems behind the magic, and how to scale without losing your soul.
16:30 - CLOSING KEYNOTE: From Greengrocer to High-Street Icon: 25 Years of Building, Scaling & Reinventing Bill’s
Bill Collison – Founder, Bill’s
Sheri Williamson – Commercial Director, Bill’s
CJ Crooks – Brand Director & Lead Design Consultant, Bill’s
In October 2000, a devastating flood wiped out Bill Collison’s Lewes greengrocer shop. Out of the wreckage, Bill rebuilt, pivoted, and reopened in 2001 as a café and store, laying the foundation for one of the most beloved, resilient, and visually iconic success stories on the British high street.
To celebrate a quarter-century of Bill’s, Founder Bill Collison joins the stage in a rare, exclusive appearance alongside Commercial Director Sheri Williamson and Brand Director CJ Crooks for an unfiltered, 360-degree masterclass on building a brand with true staying power.
What we'll cover in this session:
The Founder Soul at Scale: How a local greengrocer turned seasonal produce and artisanal charm into a national obsession and why Bill remains as obsessively hands-on today as he was 25 years ago.
High-Street Survival & Evolution: The hard-won revelations, commercial pivots, and estate strategy required to navigate economic shifts and stay relevant across two and a half decades.
The Boardroom Balancing Act: How founder gut-instinct, commercial rigor, and creative design collide and coexist to modernize a brand without losing its identity.
Note: Bill Collison rarely speaks on public stages or event circuits. This exclusive 25th-anniversary session is a one-off opportunity to steal the playbook from one of hospitality's greatest innovators.
